The History of Sushi

Sushi’s origins date back to Southeast Asia, where fermenting fish with rice began as a preservation method. This practice, known as narezushi, reached Japan in the 8th century. During the Nara period (710-794), sushi involved placing river fish like ayu and funa on sweet vinegar-seasoned rice and letting it rest overnight. It was consumed as a preserved food and was also presented as tributes to the imperial court, making it a delicacy for the nobility. The remnants of this type of sushi can still be found today in Shiga Prefecture’s “Funazushi.”

During the Edo period (1603-1868), sushi evolved into nigiri-zushi – hand-pressed rice topped with fresh fish, resembling the sushi we enjoy today.
