Did you know the difference between buri and hamachi? Actually, buri and hamachi are the same fish, but the name changes depending on their growth stage. Generally, the younger fish are called “hamachi,” while the mature fish are called “buri.” This means that buri is cherished for its rich and mature flavor, offering a deeper and more complex taste compared to its younger counterpart.
