What is Sujiko? Characteristics and Flavor
Sujiko refers to the roe sac carefully extracted from the salmon family fish, with the eggs remaining enclosed in their natural membrane, often preserved with salt. When further processed, the eggs are separated individually, becoming what is known as ikura. Unlike ikura, sujiko roe is smaller in size as it is still immature, with a softer membrane that easily bursts, giving it a distinct texture.
Unlike ikura, sujiko retains its natural membrane, resulting in a rich texture and enhanced umami flavor.
